Game Day Recipe: Chunky Chicken Crock Pot Soup

It’s time for the Sunday Game Day recipe again!  Lately on Sundays I’ve been featuring some great appetizers…but this time I decided to make a crock pot dinner!

I call it my Chunky Chicken Crock Pot Soup, a recipe I came up with all on my own this weekend!  It takes some cues from the Crock Pot Frozen Chicken Breasts Recipe and has some similarities to the Crock Pot Beef Stew Recipe.  After I made it, my husband said he liked it even better than my Beef Stew recipe!!

Again, with this recipe, I did not use an onion, but I’m sure if you do, it will add to the flavor.  Also, if you have regular de-thawed chicken breasts on hand instead of frozen,  you can cut down the cooking time a bit.  I used frozen ones in my recipe.
Ingredients: 
  • 3 Frozen Chicken Breasts
  • 1 (12 oz) jar Chicken Gravy
  • 2 cups Chicken Stock
  • 2 large peeled and diced potatoes (cut into chunks)
  • 4 peeled and sliced carrots (I slice the way you would cut up carrots to put on a vegetable tray)
  • 1/2 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 teaspoon Italian Seasoning
Directions:
  • Pour 1 and 1/2 cups of chicken stock into your crock pot.
  • Add your entire jar of chicken gravy into the pot.
  • Add your salt, pepper, and Italian seasoning.
  • Stir all ingredients until mixed well.
  • Add your carrots and potatoes and mix in together.
  • Place your frozen chicken breasts on top of the carrots and potatoes.  (When I take chicken breasts out of the freezer, they are usually frozen stiff and stuck together.  You don’t need to worry about pulling them apart with this recipe!  Just place all three of them together in the crock pot on top of the other ingredients!)
  • Pour your remaining 1/2 cup of chicken stock over the top of the chicken.  (The broth will not cover the chicken completely…don’t worry about this)
  • Add a little freshly ground salt and pepper onto the tops of the chicken.
  • Cook on low for 8 hours (or on high for 4 hours).
  • Pull the three pieces of chicken apart and take out of the crock pot.
  • Using a cutting board and knife, cut each of the chicken breasts into chunky pieces.
  • Add the chicken back into the crock pot, stirring into the broth.
  • Scoop into bowls and serve.

Enjoy your game day meal!  If you serve with whole grain bread, it is great for dipping in the broth!!
