Recipe for Game Night: Checkerboard Cheese Sandwiches

Getting together with friends and family for a good old fashioned game night!?    If so, you know the night is bound to be a great time!  So why not bring an appetizer that is just as fun?

Here’s a recipe that I found online a few months back and brought to a a game night!  It was not only fun and delicious, but fit in perfectly with the “Game Night” theme! Checkerboard Cheese Sandwiches!  What’s great is that you can take this concept and make any type of sandwiches…tuna, chicken salad, or anything!

Ingredients:

  • 1 (10 oz) block of extra sharp cheddar cheese.
  • 1 (10 oz) block of swiss cheese
  • 1 and 1/4 cups of mayonnaise
  • 1 (4 oz) jar of diced pimento
  • 1 teaspoon of dried onion flakes
  • 1/4 teaspoon of freshly ground pepper
  • 20 thin slices of white bread (Pepperidge Farm Very Thin Bread works great!)
  • 20 thin slices of wheat bread (Pepperidge Farm Very Thin Bread works great!)
  • Grape tomatoes and black olive for garnish

Directions:
  • Grate both blocks of cheese
  • Drain your pimento.
  • Mix together your grated cheese, drained pimento, mayonnaise, onion flakes and ground pepper.


TIP: If you are a taste tester like me when you are cooking, I found that this did not taste great when I first mixed it together.  I actually stored it in the refrigerator overnight and then next day it tasted amazing!!!  I definitely recommend this tip!

  • Once your mixture is stored overnight, remove from the refrigerator.
  • Spread your mixture on half of the white bread slices.  Then top your sandwiches with the other half of the white bread slices (You should have a total of 10 regular sized-sandwiches at this point).
  • Take the other half of your mixture and spread on half of the wheat bread slices.  Then top your sandwiches with the other half of the wheat bread slices.
  • Cut off the crusts of all of the sandwiches.
  • Then cut the sandwiches into four squares each.
  • Next stack the sandwiches in sets of two, by placing one square on top of the other.
  • Arrange on a serving plate in a checkerboard pattern, alternating the wheat and the white.
  • Then using toothpicks, garnish with black olives on one side of the board and grape tomatoes on the other side of the board, signifying the checker pieces!
