How to Cook Bacon in the Oven

Sunday breakfast is one of my favorite meals! Mainly because I don’t have to go to work, I can relax with my family, and I can stay in my pajamas all day if I want to! With a very active one year old girl at my feet, it is definitely tougher to stand at the stove than it used to be. Not only does she hang on my legs, but all she wants is to be picked up so she can see all the action (future chef in the making??) Unfortunately as good as bacon smells and as exciting it is to see grease popping in the frying pan…it’s not the safest place for a baby!

So I decided to try something different this weekend. I decided to cook bacon in the oven instead of on the stovetop. It’s not necessarily an overall time saver, but it does allow you to take the cooking time and spend it doing something else while your oven does all the work. All you need is a baking sheet, some parchment paper, and of course the bacon itself. Throw it in the oven for 30 minutes and your job is done.

We took our half hour to build some block towers, knock them down, and build them up again.  We have these classic wooden blocks with ABC’s on them that she loves (I remember playing with the same blocks when I was little!) We sang our ABC’s and I also heard our daughter said “Pooh” for Winne the Pooh for the first time today!  Very exciting day in the Haggerty household, hahaaa. And definitely time well spent! When the half hour was up, I pulled the crisp, hot bacon out of the oven and we enjoyed it with some scrambled eggs. I would definitely recommend this method of baking bacon to anyone! It doesn’t have to just be for busy parents, but even for anyone who just doesn’t want to get splattered by bacon grease in the cooking process! Here’s my way of how to cook bacon in the oven!

Baked Bacon

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Yield: 1 lb cooked bacon

Baked Bacon

Ingredients

  • 1 lb bacon

Instructions

  • Preheat oven to 350°
  • Line two baking sheets with parchment paper.
  • Lay strips of bacon flat across baking sheet.
  • Bake in 350° oven for approximately 30 minutes - the bacon should appear browned and crisp.

Recipe: Bacon Wrapped Tater Tots

As a mom on the go, I’m always looking for easy breakfast options – and sadly, it usually ends up with me just grabbing a granola bar out of the cabinet. This recently happened to me – I ate my trusty granola bar at 7am and then went on with the rest of my day. Until I started mindlessly scrolling through my Facebook newsfeed and saw a Buzz Feed Video for Cheesy Bacon Wrapped Tater Tots! My mouth started watering – I watched the video three times and showed it to my husband and made him watch it. I then ran into the kitchen and exclaimed “I am making this right now!!”

Luckily, I already had the necessary ingredients on hand in the kitchen. I decided to make my own version of this recipe, using the video as inspiration. I made it easy with only two ingredients: bacon and tater tots. I decided to use up a whole pound of bacon, which ended up making 50 bacon wrapped tater tots. It was definitely too much for two people (our daughter is only 8 months old and certainly cannot eat this yet!!) But they were easy to save for another day in an airtight container. You can re-heat in the microwave, but I suggest reheating any leftovers in the oven to keep the bacon crispy.

Bacon Wrapped Tater Tots

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 50 Bacon Wrapped Tater Tots

Bacon Wrapped Tater Tots

Ingredients

  • 1 lb bacon
  • 50 Frozen Tater Tots (I used a 32 oz bag and had extra leftover that you can save for another time)

Instructions

  • Preheat oven to 400°
  • Line a baking sheet with parchment paper.
  • Remove the bacon from the packaging and slice each piece of bacon into three equal-sized smaller pieces (Time saving trick: I kept the bacon stacked and cut through the whole stack at once)
  • Wrap each tater tot tightly in the bacon.
  • Place the bacon wrapped tater tots onto the parchment paper with the seam of the wrap facing down.
  • Bake in 400° for about 20 minutes; then flip each bacon wrapped tater tot to the other side.
  • Continue baking for an additional 10 minutes.
  • Remove from oven (there will be a lot of grease in the bottom of the pan, so be careful)
  • Get a plate and cover it with a couple of stacked paper towels.
  • Take each tater tot and place on the plate of paper towels to allow some of the grease to drain.
  • Enjoy!

Sunday Brunch: Spiced Coffee Cake Recipe

Earlier this summer, I got together with some old work colleagues for a Sunday Brunch!  It was great to see everyone and try out everyone’s favorite breakfast recipes!  I decided to make a spiced coffee cake!  I created it by adapting my carrot cake recipe.  I took the basics of the old recipe I made before, took out the carrots, baked it in a different type of pan, and sprinkled powdered sugar on top instead of icing it with cream cheese icing like I did before.  It is so nice to be able to change these couple little things and come up with a whole new cake!

Coffee Cake Recipe @FoodMarriage

Spiced Coffee Cake

Prep Time: 10 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 5 minutes

Spiced Coffee Cake

Ingredients

  • 1 1/4 cups all purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 3/4 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup walnuts
  • 1/2 cup raisins
  • Powdered sugar (for sprinkling on top)

Instructions

  • Preheat oven to 325°.
  • Grease a bundt pan with butter.
  • Mix the first 8 ingredients for your cake together in a mixing bowl (flour, sugar, baking powder, salt, cinnamon, vegetable oil, eggs, and vanilla).
  • Blend ingredients for one minute on low speed.
  • Switch to medium speed and blend for an additional 2 minutes.
  • Stir in your walnuts, and raisins.
  • Pour into prepared pan.
  • Place pan into the oven and bake at 325° for about 50-55 minutes (until a toothpick inserted into the center of the cake comes out clean).
  • Remove from oven and let cool completely.
  • Remove cake from the pan once cooled and sprinkle powdered sugar on the top of your cake.

Gluten Free Friday: Cheddar & Parsley Omelette

Breakfast doesn’t have to be bagels, muffins, and pastries.  A great way to enjoy a gluten free breakfast is with eggs.  I’m usually a grab a granola bar on the way out the door kind of girl, so I don’t typically take the time to make eggs in the morning.  However,  I had the day off from work today to enjoy a long weekend, so I had the luxury of taking my time making and eating breakfast today!

Omelette Recipe with Cheddar and Parsley @FoodMarriage

I had a large bunch of parsley from last week’s CSA pickup, so I was trying to be creative to use some of it up.  I decided to make a cheddar and parsley omelette!  I love cheese in my eggs and then the parsley gave a mild flavor and a lot of color to the meal.  I actually used a lot of cheese, so I used a 1/2 cup, but feel free to cut it down to 1/4 cup if you think it is too much for you.  Once it was cooked, I drizzled my omelette with ketchup and enjoyed a lovely breakfast on my back porch in the beautiful weather!

Cheddar & Parsley Omelette

Prep Time: 2 minutes

Cook Time: 10 minutes

Total Time: 12 minutes

Yield: 1 large omelette

Cheddar & Parsley Omelette

Ingredients

  • 1 tablespoon butter
  • 3 eggs
  • 2 tablespoons freshly chopped parsley
  • 1/2 cup grated sharp cheddar cheese
  • Salt and Pepper

Instructions

  • Melt the butter in a pan on the stove over medium heat.
  • Crack your eggs into a bowl and beat the yolks into the whites with a fork.
  • Chop your fresh parsley and add to the eggs.
  • Grate your cheese and add to the eggs. Once it is mixed well, pour into an 8" omelette pan with the melted butter.
  • Cook on one side until the edges start to firm up and the middle starts to bubble up a bit.
  • Flip the entire omelette over to the other side to finish cooking through.
  • Once fully cooked, fold the omelette in half and serve.

Happy Birthday Pat / Recipe for Homemade Home Fries

SOOO sorry for the lack of posting recently.  I’m sure everyone is busy this time of year with holiday parties, running out to do last minute shopping, and of course baking and getting ready for all of the great food we will be eating this time of year.  It has also been really busy for us because my husband and I both have birthdays right before Christmas!!  Pat’s birthday was this past Monday, December 17 (and mine is coming up on December 22!)

Growing up, my mom always had a tradition of making everyone’s favorite meals on their birthday.  I always had her make her famous Beef Stroganoff for my birthdays.  My youngest brother, David, always loved Thanksgiving dinner so much that he requested a full Thanksgiving dinner every year on his birthday!!!!

I decided to continue this fun family tradition now that I am married.  I asked Pat what he wanted for his birthday dinner.  He loves breakfast so much, so he requested breakfast for dinner!!  I made a delicious meal of eggs, bacon, and crispy home fries!!  Check out my easy recipe for home fries/ fried potatoes below!

Recipe: Home Fries

Ingredients:

  • 3 Russett potatoes
  • 3 tablespoons butter
  • Salt and Pepper
Directions:
  • Peel and cut potatoes into bite sized pieces.
  • Melt 3 tablespoons of butter into a pan on the stove over medium heat.  (If you are making more potatoes, my rule of thumb would be for each extra potato you add in, add another tablespoon of butter)
  • Toss your potatoes into the melted butter and season generously with salt and pepper.
  • Fry in the butter until potatoes are crispy and golden-brown, stirring occasionally to brown both sides of each piece of potato.
And that’s it!  Really easy recipe!!
