Valentine’s Day Rice Krispie Treats

Happy Valentine’s Day!!  Pat actually surprised me a little early by bringing me home a heart-shaped, brownie-batter filled doughnut from Dunkin.  It was a perfect present!  He really knows the way to my heart!!!

To celebrate Valentine’s Day I made two batches of Rice Krispie treats…one for me to share at a work potluck lunch and one for Pat to take to share with his coworkers.  Then I decorated them with pink and red candy melts and wrote different sayings on them, like candy conversation hearts.  They turned out really cute!!

Valentine’s Day Rice Krispie Treats

Ingredients:

  • 9 cups Rice Krispies Cereal (this turns out to be a little less than a whole 12 oz box)
  • 1/4 cup butter (half a stick)
  • 1 bag (10 oz) mini marshmallows
  • Red, White, and Pink candy melts

Directions:

  • Grease the bottom of a 13×9 pan with butter and set aside.
  • Place 1/4 cup butter in a pan on the stove.
  • Turn burner on low.
  • Melt the butter completely and then add in your entire bag of marshmallows.
  • Keep on low heat and stir continuously until all marshmallows are smooth and melted.
  • Next mix in 9 cups of Rice Krispies cereal.  Stir until well blended.
  • Pour the mixture into the 13×9 pan.
  • Let cool completely and then cut into small squares (My advice is to turn the pan over and tap it out of the pan.  That way, you don’t need to cut the treats in the pan).
  • Melt your candy melts according to the directions on the packaging.
  • Paint the tops of half your krispie treats with red candy melts and the other half with pink candy melts.
  • Allow the tops to harden completely and then paint fun sayings on the tops of your krispie treats (I use Wilton Disposable Candy decorating bags for this part).

Oreo Balls!

These Oreo Balls might be the best thing that you EVER put in your mouth….seriously, they are incredible.  This recipe was passed along to me by my friend Nicole.  I’ve made them twice in the last year, but this time I made sure to snap a picture of them so I could share with all of the Food Marriage Readers.  This recipe is extremely easy to remember with only three ingredients! And it has no bake time – you just mix and then toss in the freezer!

Recipe: Oreo Balls

Ingredients:

  • 1 box Oreo Cookies
  • 1 8oz package of cream cheese
  • White chocolate OR vanilla candy melts
Directions:
  • Leave your cream cheese out to soften in advance of making this recipe.
  • Dump all of your entire box of Oreo cookies into a plastic zipper bag.  Crush all of the cookies until they are small crumbs.  (I used a rolling pin to smash and roll out until everything was completely crumbled)
  • Mix your Oreo crumbs with the cream cheese (this will take some time to work together.  Keep mixing until you no longer see the white of the cream cheese and all your crumbs are stuck together in the mixture)
  • Once fully blended, take small sections of your mixture and roll between your hands to create small balls.
  • Place the balls in the freezer for about an hour and a half.
  • Melt white chocolate (or use vanilla-flavored candy melts) and drizzle the candy over the top of each of the balls using a spoon or a spatula.
  • Place back in the freezer for at least another hour and a half before serving, but they can stay in the freezer as long as you like.
  • Serve directly from the freezer.

Candy Corn Inspired Rice Krispie Treats!!

First, I would like to report that we are safe and sound after Hurricane Sandy came through last night.  We had some high winds and a couple trees down, but we weathered the storm just fine.  Pat and I are keeping all of the affected families in our thoughts and prayers.

Next, I wanted to share something that I made this weekend, but didn’t get a chance to post until now because of power outages.  I am SO proud of myself when I come up with an idea 100% on my own and not from online or in a magazine!  I started off with the idea just to make orange-colored rice krispie treats by putting food coloring in the melted marshmallow.  I then came up with the idea to use up some candy melts and paint the tops of the krispie treats to make them look like candy corn!!
Candy Corn Inspired Rice Krispie Treats Recipe
Ingredients:
  • 9 cups Rice Krispies Cereal
  • 1/4 cup butter
  • 1 bag (10.5 oz) Mini Marshmallows
  • Candy Melts (you can buy them in different colors or you can just use food coloring to dye white ones)
  • Food Coloring
Directions:
  • Grease the bottom of a 13×9 pan with butter and set aside.
  • Place 1/4 cup butter in a pan on the stove.
  • Turn burner on low.
  • Melt the butter completely and then add in your entire bag of marshmallows.
  • Keep on low heat and stir continuously until all marshmallows are smooth and melted.
  • Add in food coloring at this point to dye your melted marshmallows orange.
  • Next mix in 9 cups of Rice Krispies cereal.  Stir until well blended.
  • Pour the mixture into the 13×9 pan.
  • Let cool completely and then cut into small rectangles.
  • Melt your candy melts according to the directions on the packaging.
  • Paint the tops of each krispie treat completely with orange candy melt.  Let cool and then add a thicker stripe of yellow on the bottom and then a small bit of white on the top.
  • Let the candy melts harden completely before stacking or storing.

Game Day Recipe: Pumpkin Dip

To start off Pumpkin Week, I thought I would share something delicious and good for Game Day or any other get together!  I recently made a batch of it up for a potluck lunch at work and one of my coworkers described the flavor as tasting like “liquefied pumpkin cheesecake.”  It was a huge hit!

This recipe for Pumpkin Dip was passed along to me by my friend Jessica.  And now I am happy to pass it along to all of my readers!!  You can serve it in a regular serving dish along with graham crackers.  OR you can be creative like I was and actually create a pumpkin bowl to put your dip in!  All you need to do is to cut off the top of a small pumpkin and be sure to scoop out all of the insides.  So festive!!

Pumpkin Dip

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: Feeds a party of 10+

Pumpkin Dip

Ingredients

  • 3/4 cup canned pumpkin
  • 8 oz cream cheese
  • 7 oz marshmallow fluff
  • 1 teaspoon pumpkin pie spice
  • Graham Crackers

Instructions

  • Let your cream cheese sit out for a bit to soften.
  • Mix all ingredients together (don't be afraid to add more pumpkin pie spice if you like - I accidentally did and it turned out just fine!)
  • Keep dip refrigerated until serving.
  • Serve with graham crackers and enjoy!

Fast Fudgey Brownies with Fantastic Fudgey Frosting!

My youngest brother, David, just turned 15 this week!!  (I’m feeling SO old…I remember being that age!)  For his birthday, I told him I would make any type of dessert he wanted.  He decided on brownies, but got scared when I told him I was going to make them from scratch.  He is used to the box brownie mix – simple, easy, and tasty.  But I promised him if I made brownies from scratch, that they would be amazing!  So he agreed, and I got to baking.

I went straight to my Hershey’s Classic Recipes cookbook.  I have had incredible success with this cookbook in the past, making things like a Fudge Truffle Cheesecake and the Brownie Cupcakes with Peanut Butter Chips that I love so much.  I knew this would be the perfect spot to try out a new brownie recipe.  I made what I now call Fast Fudgey Brownies with Fantastic Fudgey Frosting!

Ingredients for Fast Fudgey Brownies:

  • 4 ounces Hershey’s Unsweetened Baking Chocolate (they are usually sold in bars in the baking aisle.  Note: This is NOT the same as regular Hershey’s chocolate bars that you find in the candy aisle.  Be sure to get the Unsweetened Baking Chocolate!!!!!)
  • 3/4 cup butter
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup all-purpose flour
Directions for Fast Fudgey Brownies:
  • Preheat oven to 350°
  • Grease a 13×9 pan
  • Melt your chocolate and butter together in a pan on the stove on low heat.  Stir while you are melting, until everything is smooth.
  • Pour your chocolate/butter mixture into a mixer.  Add in your sugar and mix well.
  • Next, add in your eggs and vanilla and mix again.
  • Finally, add in your flower and mix until well blended.
  • Spread mixture into your pan.
  • Bake in 350° for about 25-30 minutes.
  • Let cool completely and then cut into squares.

TIP: Cutting your brownies into squares and then icing them afterwards seems to lessen the mess when trying to get the brownies out of the pan!
Ingredients for Fantastic Fudgey Frosting:
  • 3 tablespoons butter
  • 3 ounces Hershey’s Unsweetened Baking Chocolate
  • 3 cups powdered sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
Directions for Fantastic Fudgey Frosting:
  • Melt your chocolate and butter together in a pan on the stove on low heat.  Stir while you are melting, until everything is smooth.
  • Pour your chocolate/butter mixture into a mixer.
  • Add in the powdered sugar, milk, vanilla, and salt.
  • Beat on medium speed until well blended.
  • Depending on the consistency, you may want to refrigerate for about 10-15 minutes to let it set and thicken a bit.
  • Use a knife to spread on each of your brownie squares you already cut.
  • Sprinkle with a bit of powdered sugar for decoration (I put mine into a thin wire mesh strainer, and then just tapped it a bit to let the powder fall through lightly)
