Creamy Garlic Mashed Potatoes for Two!

It’s taken me quite some time to perfect the art of cooking for two.  I still usually make too much food for my husband and me, but I’m getting much better at it.  I’ve learned that to make a good amount of mashed potatoes for the two of us, it usually take about 3 medium-sized potatoes.  That leaves enough potatoes for me to do my plentiful tasting right out of the mixer!!!  (And of course enough to go with our dinner, too).

I decided to put a twist on traditional mashed potatoes tonight and make garlic mashed potatoes!!  This recipe is for two, but if you like it, just double or triple the recipe based on how much you need to make!

Ingredients:

  • 3 medium-sized russet potatoes
  • 1/2 cup milk
  • 2 tablespoons butter
  • 3 pressed cloves of garlic
Directions:
  • Wash and peel your potatoes.
  • Once peeled, cut into cubes.
  • Add potatoes into a pot of water on the stove.
  • Turn pot on high and bring to a boil.  Continue boiling until potatoes are tender (you can check this with a fork – if the fork goes in and out easily or the potatoes are starting to fall apart, they are ready).
  • While your potatoes are boiling, take a small saucepan and add in your milk and butter.  Next, add in three garlic cloves that have been pressed through a garlic press.  Stir and turn onto medium heat, until the mixture begins to simmer.  Remove it from the heat at this point and set aside.
  • When your potatoes are done boiling, drain them and then add them into your electric mixer.
  • Turn your mixer on medium and and start mashing your potatoes.
  • Once partially mashed, add in your milk/butter/garlic mixture.  Turn the mixer up to high speed to whip your potatoes.
  • Add salt and pepper to taste.

These garlic mashed potatoes will be whipped to creamy perfection!  YUM!
