Today’s recipe came about because of my husband! He was really excited about the Ohio State vs Duke University basketball game last night. I love mascots, so naturally said that I thought that Ohio State should win because a Buckeye sounded cooler than a Duke. (My husband later corrected me, letting me know that Duke’s mascot is not a Duke….they are actually the Blue Devils….who knew!? haha)

In all of this conversation one of the Food Marriage Blog followers, Mike Scammahorn, who is actually from Ohio, mentioned that you can cook buckeyes! He meant the nuts, buckeyes. Thanks for the info, Mike!!

Mike’s comment lead me to look up information on buckeyes online. In my research, I came to find that Buckeyes are ALSO candy-like desserts made to look just like buckeyes! I quickly jumped off the couch and ran to the kitchen to see what ingredients I had on hand and went right to work making my candy buckeyes. They were ready to eat right in time for the game at 9:30pm last night!! Here’s the recipe!

Ingredients:
- 1/2 cup butter (1 stick)
- 3 and 1/2 cups confectioners sugar
- 1 cup peanut butter
- 1/2 teaspoon vanilla extract
- 1 bag semi-sweet chocolate chips
Directions:
- Melt your butter in a larger bowl in the microwave.
- Pour about half of your powdered sugar into the butter and stir until smooth.
- Add the peanut butter and vanilla and continue stirring.
- Once smooth again, add in the remainder of your powdered sugar.
- Line a cookie sheet with wax paper.
- Using a cookie scoop – scoop 1-inch sized balls onto the cookie sheet. (If you do not have a cookie scoop you can roll into balls, but the cookie scoop is a less messy and easier)
- Place your cookie sheet into the freezer for about 30 minutes.
- Melt your chocolate chips in the microwave and stir until smooth. Do not overheat or the chocolate will actually burn and harden.
- Remove your peanut butter balls from the freezer and begin dipping them into the chocolate. Dip until the ball is about 75% covered, so it looks like a buckeye!
- Place on a new cookie sheet lined with waxed paper, with the open side of the ball facing up.
- Place your buckeyes back into the freezer until chocolate is fully hardened.
- Keep stored in the refrigerator until serving.
