I love garden-fresh summertime yellow squash! I don’t personally have a vegetable garden, but I wish I did! My mom recently got some extra yellow squash from a friend’s garden and passed some of it my way. Since I always just make squash plain in a pan or on the grill, I decided to do something a little different today. I battered and fried my yellow squash and it came out delicious!
- 1 Yellow Squash
- 2 eggs
- A bit of milk
- Italian Style Breadcrumbs
- Vegetable Oil
- Pour oil into a large pan. Be sure the bottom is covered and there is enough oil to fry your food.
- Turn the heat up on your stove to medium heat to pre-heat the oil.
- While the oil is heating, slice your squash (I would say not paper-thin, but not to thick either. About 1/4 inch?)
- Crack two eggs into a bowl and pour in just a bit of milk. Beat this mixture.
- Dip your squash slices into the egg/milk mixture.
- Next, coat both sides of your squash into your breadcrumbs.
- Place your battered squash slices flat into your hot oil. Once you notice one side get golden brown, flip to the other side. Assuming your oil is hot, they will only take a minute or two on each side.
- When you remove from the pan, you may want to drain the excess oil. I take a paper plate, cover it with a paper towel, and place the squash on top of the paper towel so the oil can soak into the paper towel.
