Dinner Recipe: Zucchini and Rice in a Stewed Tomato Sauce

Take a look at what I made for dinner tonight….WOW was it delicious!  This meal of zucchini and rice in a stewed tomato sauce is a great vegetarian meal idea!  My husband, Pat, and I are not vegetarians but it’s nice change up from some of the other meals we like to make.

Zucchini and Rice in Stewed Tomato Sauce Food Marriage

Zucchini and Rice in a Stewed Tomato Sauce

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Zucchini and Rice in a Stewed Tomato Sauce

Ingredients

  • 3 small zucchini
  • 2 tablespoons butter
  • 2 bags White "Boil in Bag" 10-minute Success Rice
  • 1 (15 oz) can tomato sauce
  • 1 (14.5oz) can stewed tomatoes

Instructions

  • Cut the ends off both zucchini and then slice each one in half long ways.
  • Next, slice up your zucchini (since you already cut it in half, you will be slicing half-moon shaped pieces).
  • Put 2 tablespoons of butter in a large pan, let it melt, and then toss in your zucchini. Keep on medium heat, stirring occasionally, until thoroughly cooked (the zucchini will start to look translucent).
  • While the zucchini is cooking, follow the instructions on the Success Rice Box, which is basically to boil the rice for about 10 minutes.
  • Once the zucchini and rice are both completely cooked separately, drain your rice and then add to the pan of zucchini.
  • Next, pour in your entire can of tomato sauce as well as your can of stewed tomatoes.
  • Keep on medium heat until everything is heated thoroughly.

Notes

Be sure to use TOMATO sauce and NOT spaghetti sauce! They are completely different!
